What do you make for breakfast when you have plenty of time to make it?
I’ll get us started.
I go with freshly brewed coffee (fair trade, of course) and pancakes. (I have yet to land on a favorite recipe, but I usually go with a healthy version.)

French press coffee (the good stuff!) (and now that it’s fall, homemade pumpkin spice lattes!) and French toast. And eggs and bacon. Or breakfast burritos. Or pancakes. ^_^ Mornings with nothing going on are a rare occurance around here, and I do like to make the most of them. ^_^
Oh, my goodness. All of that sounds divine! Especially…ok, never mind. Just all of it. I like your taste:).
An omelette. I use fresh eggs from my hens. Usually 2. I use a hand mixer to beat it to make it nice and fluffy. I use fresh homegrown garlic (which I’m almost out of) and basil and lightly sauté in olive oil, then mix in the egg. Then i choose from a variety of veggies like tomato, kale, grated carrot, zucchini, beans, etc. Most of which have come from my garden. And some type of cheese. So good!
Coffee or tea too… I did have some fair trade coffee, but I must get more.
